In Andalusia, Spain, olive wood is commonly used for grilling fish, poultry, and vegetables. Use in potato salad, marinades, brushed on grilled meats, with vegetables, and even pasta.
Pairs well with Sicilian Lemon, Pomegranate, Neapolitan Herb or Jalapeno White Balsamic.
